I'm still waiting for my two track sets to come in from Plaza. So what would happen if I tried to power two trains on two circuit tracks with 1 power pack? I'm just wondering if the draw on the available power would result in both trains running slower in a more prototypical manner.

Don't count on it. Doubtful there would be much of a drop in speed; the motors draw very little current, and the batteries provide more than enough power. Besides, slower speed operation pretty much requires some kind of pulse power; on plain DC, when the voltage drops to a particular point, the trains just stop dead.

That said... worth a try!

I figured that from my HO experience, but it was worth a hope. Maybe, the good guys across the pond will come up with a pulse system.
